An American-brand commercial water heater with stainless steel flex lines

Flexible connectors come in copper or stainless steel and in diameters from residential to commercial. They are an alternative to soldered copper plumbing and desirable if one ever wants to open up a water heater for service. They function as a dielectric, keeping dissimilar metals apart in water, something that causes detrimental electrolysis and the damaging or destruction of one of the metals. The photo at left has flexible copper connectors such as are commonly used on residential-type water heaters. The photo on the right is from a commercial tank with 1 and 1/2-inch stainless steel flex lines.
