If saving energy is the goal, either tank would be OK. A “normal plumbing” system has several hundreds of watts of standby looses. Normal plumbing has both the inlet and outlet lines going straight up then going horizontal. Building goose neck heat traps will cut these losses in half even if the goose necks are uninsulated. Insulate the goose necks and losses almost disappear. In ball park terms, a normal plumbing system may have 3500 kWhs per year in standby losses while an insulated goose neck system might have losses of 175 kWhs per year.
